This recipe is VERY forgiving; you can really experiment with the nuts and seeds you use depending on what you have in the cupboard or what you prefer. Cinnamon is included for additional health benefits, as this spice has been found in research to help with blood sugar control by enhancing the action of insulin in the body, and it even helps to lower LDL cholesterol levels.

Really quick to put together, these energy balls make a delicious and healthy on the go snack, quick pudding on a busy day, or as a fuel for workouts. Rich in antioxidants, healthy fats, minerals and fibre.

Ingredients (makes about 20 balls)
150g nuts and/or seeds e.g. almonds, hazelnuts, pecans, walnuts, sunflower seeds, pumpkin seeds (chia seeds are added later so don’t include these here)
200g medjool dates, pitted
3 tbsp raw cacao powder
1tsp cinnamon
1.5 tbsp almond butter or tahini
1.5 tbsp coconut oil
1.5 tbsp whole chia seeds
1 tbsp water

Place the nuts and seeds (not chia) in a food processor and blend for about 10 seconds until finely chopped/crushed. Add all the other ingredients and blend again until the mixture has all come together and is sticky. Take the blade out of the processor and roll the mixture into small balls between the palms of your hands, whatever size you fancy.

Place in a container or on a plate then freeze for about an hour, then place in an airtight container and store in the fridge.
